Spanish Rice

There is nothing I enjoy more than finding a way to marry convenience with  great taste.
Combining a rainbow of fresh vegetables with brown rice makes a tasty side dish for chicken or fish.
Or if you are looking for a quick and easy way to have a healthy lunch on the go, combine with a tin of water packed tuna.

2 Cups brown rice
1/2 tsp Salt
2 Tomatoes, chopped
6 Baby marrow, chopped
1/2 Red onion, chopped
1 Red sweet bell pepper, chopped
1/4 Cup fresh flat leaf parsley, finely chopped
Tabasco (optional)

Boil the rice with a little salt as per normal.
In the mean time, chop all of the vegetables and store until the rice is ready.
When the rice is perfectly cooked, combine well with the chopped vegetables and parsley.
Add Tabasco to your taste preference.
